Keto Lemon Poppyseed Muffins

Ingredients

  • 3 cups  almond flour
  • 1/2 cup ghee, melted
  • 3 large eggs, whisked
  • 3 Tbsp lemon juice + zest of 1 lemon
  • 3 Tbsp + 1 tsp Lakanto or preferred sweetener
  • 1 tsp aluminum-free baking soda
  • 2 Tbsp poppy seeds
  • Dash of Himalayan or sea salt
  • 1 scoop of Organixx Collagen Powder

Instructions

  1. Preheat oven to 350 F.
  2. Mix together all the ingredients in a large mixing bowl.
  3. Pour into muffin pans (use silicone muffin pans or grease the metal pans). Makes 12 muffins.
  4. Bake for 16-18 minutes until a toothpick comes out clean when you insert it into a muffin.
  5. Enjoy!

  1. Love the ghee in these, makes them super moist! ... but they aren't very sweet or lemony... i even added three drops lemon essential oil. I think more zest would help, and if you are making for someone who doesn’t appreciate the keto plan, sub regular sugar. For me, they’re good, but consensus at my house is add icing or more sweetener.

  2. Is the collagen essential to the recipe?

    Also have you made this recipe with coconut oil rather than ghee (or a combination of these)?

      It is your preference whether you wish to add our Clean Sourced Collagens to the recipe or not. We just feel that it makes a great addition to any recipe.

      The recipe was made with melted ghee which is similar to coconut oil. If you would rather use coconut oil instead, you are free to do so. Let us know if you decide to recreate the recipe. We would love to hear how it turns out for you.
