Valentine’s Day Tahini Brownies
Ingredients Highlights
Almond flour is a gluten-free flour made by grinding almonds after the skin has been removed. It’s softer and finer than almond meal which is made by grinding almonds with the skin left on.
Coconut milk is made from the flesh of mature coconuts and is naturally sweet and creamy. It contains lauric acid, which has antimicrobial and anticancer properties and can help fortify immune function.
Dates are rich in heart-healthy potassium. Just one cup provides 27% of the recommended daily requirement.
Egg yolks are rich in nutrients including iron and vitamins A, D, E, and K, but it’s the white that provides the most protein. An average-size egg contains around 6-7 grams of protein with around 4 grams coming from the egg white.
Tahini is made by grinding up sesame seeds. Similar to nut butters, it is a calorically dense food that is rich in minerals. Each tablespoon of tahini contains 3g protein, 3g carbs, 2g fiber, and 8g fat.
Ingredients
11 pitted medjool dates (about 1 cup)
½ cup tahini (+ 2 additional Tablespoons for swirl)
2 free-range eggs
¼ cup coconut milk (from a can, not carton)
1 teaspoon pure vanilla extract
⅓ cup almond flour
⅓ cup cocoa/cacao powder
1 teaspoon Ceylon cinnamon
½ teaspoon baking soda
¼ teaspoon cardamom
¼ teaspoon pink Himalayan/sea salt
¼ cup chocolate chips
Instructions
- Preheat oven to 350F.
- To a food processor container, add dates, tahini, eggs, coconut milk, and vanilla. Blend until smooth, scraping down sides as needed.
- Pour into a mixing bowl and add almond flour, cocoa powder, cinnamon, baking soda, cardamom, and salt. Fold together. Stir in chocolate chips.
- Pour batter into a parchment-lined 8×8 pan and gently spread out. Pour 1-2 Tablespoons tahini over top and swirl in. Sprinkle with additional chocolate chips and a pinch of salt, if desired.
- Bake for 20-24 minutes in preheated oven or until toothpick almost comes out almost clean. Cool, slice, serve, and enjoy!
