Roasted Pear Gluten-Free Muffins

Ingredients

1 ½ cups Roasted Cinnamon Pear Sauce
½ cup avocado oil
2 eggs
1 teaspoon pure vanilla extract
1 ½ cups gluten-free flour (I’m using Bob’s Red Mill 1-to-1 Baking Flour)
½ cup coconut sugar
½ cup gluten-free oats
1-2 teaspoon(s) Ceylon cinnamon
1 ½ teaspoons baking soda
½ teaspoon pink Himalayan/sea salt
¼ teaspoon nutmeg
¼ teaspoon cloves

Serving Idea:
Top with additional Roasted Cinnamon Pear Sauce

Instructions

  1. Preheat oven to 350F.
  2. In a large mixing bowl, whisk together pear sauce, oil, eggs, and vanilla.
  3. In a separate medium-sized mixing bowl, whisk together flour, sugar, oats, cinnamon, baking soda, salt, nutmeg, and cloves. Add dry to wet ingredients and stir just until combined.
  4. Fill paper-lined or greased muffin cups. Bake in preheated oven for 16-21 minutes, or until toothpick comes out almost clean.
  5. Allow muffins to cool and enjoy!
