Low-Carb, Low-Sugar Mocha Chia Pudding

Ingredients

1 cup preferred unsweetened milk
½ cup favorite brewed coffee, cooled
1/3 cup Chia seeds
1 ½ tablespoons Cocoa/Cocao Powder
¼ teaspoon Ceylon cinnamon
1/16th teaspoon pink Himalayan/sea salt
Preferred Low Glycemic Sweetener, to taste (i.e. Powdered Lakanto/Monk Fruit/Erythritol/stevia, etc.)

Optional Add-ins:
1 scoop Clean Sourced Collagens Powder
½ teaspoon Pure Vanilla Extract
1/16th teaspoon cayenne pepper
¼ teaspoon turmeric powder

Optional Toppings:
Coconut Cream/Whipping Cream
Ceylon cinnamon
Unsweetened Shredded Coconut
Cocoa Nibs/Stevia-sweetened chocolate chips

Instructions

  1. Whisk together all of your ingredients except the chia seeds.
  2. Add chia seeds and whisk again. Let sit 10 minutes. Give one more whisk.
  3. Cover and refrigerate for 4 hours or overnight.
  4. Add desired toppings. Enjoy!

    I love eggs in the mornings too - they are one of my favorite proteins. "Healthy" is so individual, you know? That's why I try to incorporate lots of different substitutions in recipes. I believe that one of the greatest gifts we can give ourselves is discovering what our body needs to be it's best (and it changes over time!).

I was reading your description of your very “clean” collagen and the more I read, the more convinced I was that I wanted to order it and take it, until I read there are animal products in it, which is a big turn-off to me because I am a vegetarian. What in the world am I supposed to do? Do you have any advice for me?

  5. Thank you for the "healthy" suggestion. I mostly make two eggs in the am-fantastic protein. I make then fried, scrambled, over easy, etc. in a spray of oilive oil in the pan. This can be a healthy supplement as well. I like the idea of the cocoa chips. I throw in avocado as well. My wife may like the pudding idea-thank you again!
