Vegan Butter

Ingredients

  • 1 cup refined coconut oil, melted (do not use extra virgin coconut oil)
  • 2 Tablespoons avocado or hemp oil
  • 1/3 cup unsweetened hemp milk
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon nutritional yeast
  • 1/2 teaspoon Himalayan salt

Instructions

  1. Into a blender container, add melted refined coconut oil along with the avocado/hemp oil; set aside.
  2. In a measuring cup, add apple cider vinegar and hemp milk, stir to combine. The mixture should curdle slightly. Add this to blender container. Add nutritional yeast and salt and process in a blender until quite smooth.
  3. Pour into a small glass dish and refrigerate until solid.

      One of the reasons nutritional yeast was used in this recipe was for the color, in which case you could likely use a small amount of ground turmeric to give your vegan butter a more traditional golden look. However, we’re not sure what it will do to the taste if you omit the nutritional yeast as does add some flavor.

  2. What I the reason for NOT using extra virgin coconut oil?

    Where can one find “refined” coconut oil that is organic?

      The reason not to substitute refined coconut oil with extra virgin coconut oil is that it has a different consistency & may affect the end result of your vegan butter.

      Refined Coconut oil has a neutral scent and flavor which makes it better for recipes where you don’t want the taste of coconut.

      Virgin Coconut Oil boasts a delicious, tropical coconut scent and flavor.

      You can find refined coconut oil in your local health food store or online.

  3. I always look for Unrefined – why does it have to be Refined ?? — I think I will rather use the unrefined Coconut oil – without the extra effort to “pretence” !!

      The reason why you should use refined coconut oil in the vegan butter recipe is that if virgin (unrefined) coconut oil is used, the butter is going to have a coconut taste.
