Valentine’s Sweet Potato Brownies

Ingredients

1 cup roasted sweet potato, mashed (about 1 medium-sized sweet potato)
1 cup almond butter (or peanut butter or a combo of the two)
10 soft coconut date rolls (or large pitted dates)
2 eggs
⅔ cup cocoa/cacao powder
1 Tablespoon pure vanilla extract
1 teaspoon Ceylon cinnamon
½ teaspoon baking soda
½ teaspoon pink Himalayan/sea salt
½ cup chocolate chips (plus more for top, if desired)

Optional Add-Ins:
¼ cup chopped walnuts
¼ cup unsweetened shredded coconut
¹⁄₁₆ teaspoon cayenne pepper
2 scoops (or more) Organixx Clean Sourced Collagens powder

Instructions

  1. Preheat oven to 425F. Pierce a sweet potato several times and place on a parchment-lined baking sheet. Bake for about 45 minutes or until fork is easily inserted. Allow potato to cool and remove the peel. Mash up and measure out 1 cup.
  2. Add mashed potato to a food processor along with almond butter, dates, and eggs. Process until you reach a smooth consistency — this may take several minutes.
  3. Add cocoa/cacao powder, vanilla, cinnamon, baking soda, salt, cayenne pepper, Organixx Clean Sourced Collagens powder, and coconut. Process again. Fold in chocolate chips and walnuts, if using.
  4. Preheat oven to 350F. Spread batter in a lined 8” x 8” baking pan and bake at 350F for about 30 minutes (start checking around 23 minutes).
  5. Remove pan from oven and allow brownies to cool before serving. Enjoy!
