Easy Stuffed Dates

Ingredients

Almond Butter/Peanut Butter/Tahini Dates:

5 large Medjool dates
3 Tablespoons almond butter OR peanut butter OR tahini
¾ teaspoon Ceylon cinnamon + ¼ teaspoon cardamom (use half of the spice mixture)
15 chocolate chips (or about 1 Tablespoon chopped dark chocolate)

Cashew Butter Dates:

5 large Medjool dates
3 Tablespoons cashew butter
¾ teaspoon Ceylon cinnamon + ¼ teaspoon cardamom (use the other half of the spice mixture)
15 chocolate chips (or about 1 Tablespoon chopped dark chocolate)

Goat Cheese with Pistachios/Walnuts:

5 large Medjool dates
2 Tablespoons goat cheese
1 Tablespoon maple syrup or honey
10 pistachios or walnut pieces

Instructions

  1. Slice each date lengthwise and remove the pit.
  2. In a small bowl, mix together the peanut/almond butter/tahini and half of the cinnamon & cardamom spice blend.
  3. In a separate small bowl, mix together cashew butter and the other half of the cinnamon & cardamom spice blend.
  4. Spoon about 1 ½ teaspoons of filling into 10 dates and top with chocolate.
  5. For the Goat Cheese Dates, mix together goat cheese and honey in a small bowl. Spoon about 1 ½ teaspoons of filling into each of the remaining 5 dates and top with pistachios/walnuts.
  6. Store in fridge until ready to serve. To freeze, place on a baking sheet to harden for about an hour, then transfer to a freezer bag or air-tight container. Lasts up to 2 months frozen. Thaw before serving and enjoy!

Almond butter is a food paste made from raw or roasted almonds. Compared with peanut butter, it’s higher in calcium, potassium, manganese, and monounsaturated fat but lower in protein. 

Cardamom is best known for its stomach-soothing abilities, but it also contains an antiseptic that kills bacteria that can cause bad breath. 

Cashews are a good source of healthy dietary fats and essential minerals, including copper, calcium, magnesium, iron, phosphorus, potassium, and zinc. You can easily make your own cashew butter at home by blending roasted cashews in a high-speed blender or food processor until creamy. 

Cinnamon helps to balance blood glucose and has anti-cancer and anti-inflammatory properties.

Dates are high in fiber. Just 2 Medjool dates contain about the same fiber as one cup of apple. 

Goat cheese – Unlike cow’s milk cheese varieties that grow stronger and more pungent with age, cheeses made with goat’s milk get milder and sweeter as they mature. 

Pistachios contain many beneficial nutrients for immune system function, including vitamin B6, zinc, copper, iron, selenium, folate, polyphenols, carotenoids, fiber, and protein.
