Easy Strawberry Collagen Almond Energy Bites
Ingredients
1 cup roasted and lightly salted mixed nuts (almonds, cashews, macadamia nuts, pecans, walnuts, etc.)
8 large pitted dates (about 1 cup)
⅓ cup coconut flakes
⅓ cup freeze-dried strawberries
¼ cup dark chocolate chunks/chips (or substitute with more freeze-dried strawberries)
Optional spices: 1/8 teaspoon cayenne pepper, ½ teaspoon Ceylon cinnamon, 1 teaspoon vanilla extract
Optional Nutritional Boosters:
2 scoops Organixx Clean Sourced Collagens powder
1 Tablespoon chia seeds
1 Tablespoon flax meal
Instructions
- Add nuts, dates, coconut, any desired nutritional boosters, and spices to the food processor. Pulse and then let processor run until mixture starts to come together.
- Add strawberries and chocolate. Pulse and let run until mixture becomes sticky. If it doesn’t stick between fingers, add in 1-2 Tablespoons of filtered water.
- Shape into balls. Store in covered container in refrigerator for up to 1 week. Enjoy!
