Happy Mother’s Day Roasted Strawberry Topping
Ingredients
1 lb fresh strawberries, halved or quartered depending on size
2-3 Tablespoons coconut sugar (or your preferred sweetener)
1 small organic lemon (1 Tablespoon zest + 1 Tablespoon juice)
⅛ teaspoon pink Himalayan/sea salt
1 teaspoon pure vanilla extract
2 scoops Organixx Clean Sourced Collagens powder (optional)

Strawberry Cream Cheese Spread: Mix with cream cheese
Strawberry Coconut Cream: Mix with coconut cream
Strawberry Yogurt: Stir into favorite plain yogurt

Add into smoothies for an extra strawberry flavor
Instructions
- Preheat oven to 375F.
- Whisk together coconut sugar, lemon zest, and salt in medium-sized bowl. Add strawberries and lemon juice. Stir to coat.
- Spread on parchment-lined baking sheet. Roast in preheated oven until strawberries are soft and syrupy, about 25 minutes.
- Add to a bowl and stir in vanilla extract and collagens powder, if using.
- Serve as desired. Store in refrigerator for up to 1 week. Enjoy!
