Roasted Cauliflower Salad

Ingredients
1 head cauliflower (2.5 lb) cut into bite-sized pieces
2 Tablespoons olive oil
½ teaspoon pink Himalayan/sea salt
1 apple, chopped
2 green onions, chopped (about ¼ cup)
¼ cup tahini
½ lemon juiced (2 Tablespoons)
1-2 teaspoons pure maple syrup
Spices: 1 ½ teaspoons curry powder, ¼th teaspoon each: garlic powder, pink Himalayan/sea salt, ground ginger, and ⅛th teaspoon cayenne pepper
Optional: 2 scoops Organixx Clean Sourced Collagens powder
¼ cup sunflower seeds
¼ cup raisins
Instructions
- Preheat oven to 425F.
- In large mixing bowl, toss together cauliflower, olive oil, and salt. Spread evenly onto parchment-lined baking sheet. Roast in preheated oven for 13-18 minutes. Remove pan from oven and allow roasted cauliflower to cool.
- For the dressing, whisk together tahini, lemon juice, maple syrup, spices, and Organixx Clean Sourced Collagens powder, adding water if needed.
- Assemble salad by mixing roasted cauliflower, apples, and scallions together. Add desired amount of dressing and toss to coat. When ready to serve, toss in raisins and sunflower seeds and enjoy!
