Pumpkin Espresso Bean Steel Cut Oats

Ingredients

1 13.5 oz can lite or regular coconut milk
1 cup filtered water
¼ teaspoon pink Himalayan/sea salt
1 cup gluten-free steel-cut oats
2-4 chopped & pitted medjool dates (depending on desired sweetness)
½ cup canned pumpkin puree (or more)
2 Tablespoons finely ground espresso beans (or dark roasted coffee beans)
Spices: 1 teaspoon Ceylon cinnamon, 1/4 teaspoon ginger, ¼ teaspoon clove
1 teaspoon pure vanilla extract

  • Chopped walnuts/pecans
  • Shredded coconut
  • Coconut cream
  • Chopped dates
  • Additional Ceylon cinnamon
  • Your favorite milk

Instructions

  1. Add coconut milk, water, and salt to a medium-sized pot. Bring to a boil, turn down heat to low and stir in oats and dates. Cover and let simmer for 20-25 minutes.
  2. Uncover and stir in pumpkin puree and espresso beans. Heat until desired temp and consistency reached, stirring often. Remove from heat and stir in spices, vanilla, and collagens powder, if using.
  3. Serve in bowls with desired toppings and enjoy!
