Low-Carb Pumpkin Cheesecake Shake
Ingredients
½ cup full-fat cottage cheese (I’m using organic, grass-fed)
¼ cup pumpkin puree
2 Tablespoons low-glycemic sweetener of choice (I’m using Monk Fruit)
¾ teaspoon Ceylon cinnamon + ¼ teaspoon ginger
1 teaspoon pure vanilla extract
1 scoop Organixx Clean Sourced Collagens powder
¾ cup unsweetened milk
Options for thicker consistency: add 1 Tablespoon chia seeds and/or ice
Instructions
- Blend up all ingredients until smooth.
- Add more ice for a thicker consistency and more milk for a thinner shake.
- Top with whipped or coconut cream, if desired. Dairy-free option: substitute full-fat, non-dairy yogurt for cottage cheese and top with coconut cream.
