Fresh and Crisp Pineapple and Ginger Slaw

Ingredients

½ small head cabbage, shredded, soaked & rinsed (5-6 cups shredded)
1 medium-sized carrot, grated (1 cup packed)
1 scallion, chopped
½ cup cashews, chopped

Dressing:
¼ cup plain Greek yogurt (non-dairy is fine)
1 Tablespoon sweetener (I’m using honey)
1 Tablespoon sesame oil
1 Tablespoon fresh lime juice (about ½ lime)
½ cup chopped fresh pineapple
1 Tablespoon grated ginger
1 jalapeno pepper, deseeded & finely chopped
½ teaspoon pink Himalayan/sea salt
Optional: ¹⁄₁₆ teaspoon cayenne pepper (or to taste)

Instructions

  1. Shred cabbage. Place in a colander, sprinkle with ½ tablespoon of pink Himalayan or sea salt. Toss to coat. Let cabbage release moisture for an hour or two.
  2. Make dressing by blending up all ingredients using a hand blender. Refrigerate until ready to assemble.
  3. Rinse off salted cabbage and dry well.
  4. To assemble salad, add cabbage, carrots, scallions, cashews, and desired amount of dressing. Toss to coat. Adjust seasonings, if needed. Garnish with sesame seeds and enjoy!

Scallions aka green onions have a mild onion taste and can be used raw or cooked.
