No-Flour Pumpkin Cashew Butter Bread

Ingredients

1 cup creamy cashew butter (or 2 cups roasted unsalted cashews + ¼ teaspoon salt)
2/3 cup canned pumpkin puree
1/3 cup coconut sugar
2 eggs (preferably free range)
2 teaspoons Ceylon cinnamon
½ teaspoon baking powder
¼ teaspoon baking soda
1/3 cup spicy pumpkin seeds (or regular)
¼ cup dark chocolate chunks

Optional:
2 (or more) scoops Organixx Clean Sourced Collagens powder

Instructions

  1. Preheat oven to 350F. Grease a 9×5 loaf pan and set aside.
  2. If making own cashew butter: Add cashews to food processor and blend up until creamy consistency is reached, scraping down sides as needed. Then add in ¼ teaspoon salt and blend up again. Scrape out cashew butter and add to a separate bowl. Continue with recipe below.
  3. Add cashew butter, pumpkin, sugar, eggs, cinnamon, baking powder, baking soda, and Organixx Clean Sourced Collagens powder (if using) to a food processor. Process up well, scraping down sides as needed.
  4. Pour into a mixing bowl and stir in pumpkin seeds and chocolate chunks. Spread evenly into prepared bread pan. Sprinkle additional pumpkin seeds on top, if desired. Bake for about 35 to 40 minutes or until toothpick comes out clean when inserted in middle.
  5. Remove pan from oven, let cool, slice and enjoy!
