Ingredients Highlights
Almond flour is a gluten-free flour made by grinding almonds after the skin has been removed. It’s softer and finer than almond meal which is made by grinding almonds with the skin left on.
Coconut flour is a gluten-free soft flour made from the pulp left over after producing coconut milk. Coconut flour is very popular in low-carb and keto recipes as it’s lower in carbs than wheat flour.
Cream cheese contributes fat and small amounts of vitamin A and calcium, helping create a rich texture while supporting satiety in low-carb recipes.
Egg yolks provide high-quality protein along with nutrients such as choline, vitamin D, and lutein, which support brain health and normal cellular function.
Orange zest is rich in citrus bioflavonoids and vitamin C, adding bright flavor along with plant compounds that help support antioxidant activity. Use organic citrus fruit when possible.

Ingredients
⅔ cup packed almond flour (90 grams)
2 Tablespoons + 1 teaspoon coconut flour (15 grams)
¼ teaspoon each: baking powder, pink Himalayan/sea salt, Ceylon cinnamon, cardamom
2 scoops Organixx Clean Sourced Collagens powder
4 Tablespoons unsalted butter, softened
2 ounces cream cheese, softened
6 Tablespoons granulated low-glycemic sweetener of choice
Zest from ½-1 organic orange
1 egg yolk at room temperature
1 teaspoon pure vanilla extract
Optional: Dust with low-glycemic powdered sweetener after baking
Instructions
- Preheat oven to 350F.
- In a medium-sized mixing bowl, whisk together flours, baking powder, salt, spices, and Organixx Clean Sourced Collagens powder. Set aside.
- In a large mixing bowl, beat together butter and cream cheese until creamy (1-2 minutes). Add sweetener and orange zest, beat again until fully combined. Add egg yolk and vanilla, mix on low to combine, scraping down sides as needed.
- Add dry ingredients and mix on low until just combined. Refrigerate dough for about 30 minutes to firm up.
- On parchment-lined baking sheet, scoop and shape balls. Flatten slightly. Bake in preheated oven for 10-13 minutes.
- Allow cookies to cool and dust with powdered sweetener, if desired. Enjoy!
