
Honey Cinnamon Raisin Oat Breakfast Cookies

Ingredients
1 ⅓ cup gluten-free rolled oats
⅔ cup unsweetened applesauce
2 Tablespoons honey (or desired sweetener)
1 teaspoon pure vanilla extract
1 teaspoon Ceylon cinnamon
¼ teaspoon pink Himalayan/sea salt
⅓ – ½ cup organic raisins
¼ – ⅓ cup chopped walnuts (optional)
2 scoops Organixx Clean Sourced Collagens powder (optional)
Optional Cinnamon Drizzle:
2 Tablespoons honey
1 teaspoon Ceylon cinnamon
Instructions
- Preheat oven to 350F.
- Add oats to food processor and pulse a few times to break up the oats just a bit. Add chopped oats, applesauce, honey, vanilla, cinnamon, salt and Organixx Clean Sourced Collagens powder, if using, to a large mixing bowl and stir together to combine. Fold in raisins and walnuts, if using.
- On parchment-lined baking sheet, scoop out 1 ½ tablespoon-sized cookies. Press down the top and shape the cookies with your fingers.
- Bake in preheated oven for about 11-13 minutes, or until desired doneness.
- Optional Drizzle: Heat and stir ingredients together until combined and honey is a drippy consistency. Drizzle over top of baked cookies. Serve and enjoy!
