Ingredients
1 cup chopped dried apricots (about 20)
½ cup unsweetened coconut flakes
3 Tablespoons hemp seeds
3 Tablespoons black sesame seeds
1 Tablespoon pure maple syrup
½ teaspoon Ceylon cinnamon
¼ teaspoon ground ginger
⅓ cup unsalted or salted roasted pistachios (depending on desired saltiness), chopped
Instructions
- Add all ingredients except pistachios to food processor. Pulse first, then process until a ball forms, about 1 minute.
- Scoop out 1 teaspoon size of mixture, roll into ball and coat in chopped pistachios.
- Refrigerate balls until ready to enjoy. Store covered in refrigerator for up to one week.

Serves about 28 1-teaspoon-sized bites.
