Citrusy Grapefruit and Ginger Granola
Ingredients
2 organic red grapefruit, zested & juiced (about 1 1/3 cups)
1-2 inches fresh ginger root, peeled & sliced
¼ cup honey/maple syrup
2 teaspoons pure vanilla extract
3 ⅓ cups gluten-free oats
1 cup sliced almonds
¾ cup of your favorite seeds (I used pumpkin and sunflower seeds)
½ cup chopped walnuts (or favorite nut)
1 teaspoon Ceylon cinnamon
¼ teaspoon pink Himalayan/sea salt
Optional add-ins:
1 teaspoon ground ginger
Dried fruit (add after baking)
Instructions
- Add grapefruit juice and ginger root to a small saucepan. Bring to a boil and then reduce to a simmer. Simmer for about 12-15 minutes, until mixture is reduced by about half. Stir in honey and vanilla.
- In a large bowl add the remaining ingredients, including grapefruit zest. Toss together.
- Preheat oven to 325F. Pour grapefruit liquid mixture over top of oat mixture and stir well. Spread in an even layer on a parchment-lined baking sheet. Bake in preheated oven for 30-40 minutes until granola is golden in color, stirring and pressing down every 10 minutes.
- Remove pan from oven and allow granola to cool completely. Add dried fruit if desired. Store granola in an airtight container for up to 2 weeks. Enjoy on its own or as a topping for yogurt, oatmeal, etc.
