Summer Solstice GF Lemon Honey Muffins
Ingredients
2 cups gluten-free flour (I’m using Bob’s Red Mill 1 to 1 GF flour)
2 teaspoons baking powder
1 teaspoon turmeric
¼ teaspoon baking soda
¼ teaspoon pink Himalayan/sea salt
½ cup plain yogurt (dairy or non-dairy)
½ cup unsweetened milk
½ cup honey
¼ cup melted & cooled butter/coconut oil/ghee
1 egg, room temperature
Lemon zest from 2 organic lemons
1 teaspoon pure vanilla extract
Optional Honey Lemon Glaze
1 Tablespoon butter/coconut butter
1 Tablespoon lemon juice
2 Tablespoons honey
Instructions
- Preheat oven to 350F.
- In a large mixing bowl, whisk together flour, baking powder, turmeric, baking soda, and salt.
- In a medium-sized mixing bowl, whisk together yogurt, milk, honey, butter, egg, lemon zest, and vanilla. Add wet ingredients to dry and fold together just until combined.
- Divide out batter evenly into 12 paper-lined or greased muffin tins. Bake in preheated oven for 18-20 minutes.
- If making glaze, whisk together all ingredients in a small pot. Simmer over low heat for about 5 minutes. Let cool to thicken. Brush over baked muffins, serve, and enjoy!

Ingredients Highlights

Most dairy-free yogurts are made with either coconut, almonds, cashews, soy, flaxseed, or oats as the base. Look for brands that are organic and check the label to ensure sugar isn’t one of the top 3-5 ingredients.
You mention egg yolks as part of the beneficial ingredients, but there are no eggs in the ingredient list.
