
Gluten-Free Easter Coconut Cookies

Ingredients
10 oz white chocolate (I’m using Lily’s brand sweetened with stevia)
1 ⅔ cups unsweetened coconut
1 teaspoon pure vanilla extract
Filling of choice:
Sugar free options: roasted & salted cashews/almonds, Lily’s chocolate almonds or other stevia-sweetened candy
Natural options: candied ginger, dried fruit, natural candy
Optional add-in: 1-2 scoops Organixx OrganiGreens green juice powder
Instructions
- In a double boiler, melt chocolate. Stir in vanilla extract. Stir in Organixx OrganiGreens powder, if using. Then, stir in coconut.
- On wax paper, drop by tablespoon (or your desired size). Make an indent in middle for filling. Add filling of choice.
- Let set and enjoy!
