Gluten-Free Blueberry Muffins

Ingredients Highlights

Ingredients

Wet ingredients:
¾ cup unsweetened milk
½ cup olive oil/butter/ghee, melted & cooled
¼ cup pure maple syrup
1 egg
Zest from 1 organic lemon
1 teaspoon pure vanilla extract

Dry Ingredients:
1 ¼ cup 1-to-1 gluten-free flour
½ cup almond flour
1 cup gluten-free rolled oats
½ cup coconut sugar
1 Tablespoon baking powder
1 teaspoon Ceylon cinnamon
½ teaspoon pink Himalayan/sea salt
1 cup frozen blueberries (unthawed)

Optional Add-in:
2 scoops Organixx Clean Sourced Collagens powder

Instructions

  1. Preheat oven to 350F.
  2. In a medium bowl, whisk together all wet ingredients and set aside.
  3. In a large mixing bowl, whisk together dry ingredients except blueberries. Fold in frozen blueberries, then wet ingredients and stir until just combined.
  4. In paper-lined muffin tin, divide out batter evenly. Bake in preheated oven for 20-24 minutes or until a toothpick comes out clean.
  5. Allow muffins to cool and enjoy!
