Gluten-free Apple Crisp
Ingredients
- 6 organic apples of your choice, peeled & chopped/sliced (you can leave peel on)
- 2 Tablespoons Lakanto or coconut sugar
- 1 teaspoon ground cinnamon
- 1 ½ teaspoons lemon juice
Topping
- 1 cup Lakanto or coconut sugar
- 1 teaspoon ground cinnamon
- ¾ cup old-fashioned gluten-free oats
- ¾ cup gluten-free flour
- ½ cup coconut oil
- 2 capsules of Organixx 7 Mushrooms, opened
- Pinch of Himalayan or sea salt
Instructions
- Preheat oven to 350 F. Grease 8″x8″ baking dish with coconut oil.
- In a mixing bowl, add chopped apples, 2 Tablespoons of Lakanto/coconut sugar, 1 teaspoon of cinnamon and lemon juice. Stir well. Place into baking dish.
- For the topping: In a separate bowl, add 1 cup of Lakanto/coconut sugar, oats, flour, 1 teaspoon of cinnamon, salt, 7 Mushrooms and coconut oil. Using your hands (or pastry cutter) mix up well until crumbly.
- Spread topping over apples and gently pat down to even it out.
- Bake for 40 – 50 minutes until golden brown and bubbly.
- Serve warm or cold. Enjoy!
