Flourless Blueberry Walnut Bake
Ingredients
Filling:
20 ounces fresh or frozen blueberries (about 3 cups)
1 teaspoon – 1 Tablespoon fresh lemon juice
2 scoops Organixx Clean Sourced Collagens powder (optional; can substitute with 1 Tablespoon arrowroot powder or omit completely)
Topping:
1 cup walnuts
¾ cup unsweetened shredded coconut
½ cup spicy pumpkin seeds
5 large pitted dates
2 Tablespoons coconut oil
½ teaspoon Ceylon cinnamon
¼ teaspoon pink Himalayan/sea salt
2 Tablespoons pure maple syrup/honey/agave/filtered water
Optional Toppings:
Yogurt, whipped coconut cream, ice cream
Instructions
- Preheat oven to 350F.
- Place all topping ingredients into a food processor container except for sweetener/water and process just enough to create a crumble.
- Add sweetener (maple syrup, honey, etc.) or filtered water depending on desired sweetness and process again until mixture sticks together when pressed between fingers.
- Lightly grease an 8″X8″ baking dish or line with parchment paper.
- Gently toss together blueberries, lemon juice, and collagens powder in a mixing bowl and add to greased baking dish.
- Sprinkle with the topping mixture, being sure to leave some of the blueberries uncovered.
- Bake in preheated oven for 25 minutes. Place piece of parchment paper over pan and bake an additional 10 to 15 minutes until blueberries are hot and bubbly.
- Remove pan from oven and let cool. Serve with an optional topping, if desired, and enjoy!
