Green Energy Seed Balls
Ingredients
1 cup mixed raw seeds (e.g., pumpkin & sunflower seeds)
½ cup unsweetened shredded coconut
2-3 scoops Organixx OrganiGreens green juice powder
1/3 cup (or more) dried fruit of choice (e.g., cranberries, raisins, chopped dates, etc.)
¼ cup almond/peanut/sunflower butter or tahini
1 teaspoon Ceylon cinnamon
½ teaspoon ground ginger
1/8th teaspoon pink Himalayan/sea salt
1 teaspoon pure vanilla extract (optional)
1/8th (or to taste) teaspoon cayenne pepper (optional)
Coating Options:
Sesame seeds, sunflower seeds, pumpkin seeds, shredded coconut, Ceylon cinnamon.
Instructions
- In a food processor, pulse seeds until crumbly. Add remaining ingredients and pulse together until mixture sticks together when pressed between fingers, scraping down sides as needed. Note: You may need additional dried fruit/nut butter/water/honey/maple syrup to bring mixture together.
- Roll into desired-sized balls. Leave as is or coat in desired option.
- Store balls in a covered container in the refrigerator for up to a week or store in the freezer. Enjoy!
