Cucumber Strawberry Parsley Tahini Salad

Ingredients

1 English cucumber (about ¾ lb)
2-3 strawberries, chopped
½ Tablespoon pink Himalayan/sea salt
2 Tablespoons tahini
1 Tablespoon freshly squeezed lemon juice + zest from 1 organic lemon
3 Tablespoons parsley, minced

Instructions

  1. Slice cucumber in half. Slice each half lengthwise and scoop out the seeds. Slice each quarter into thirds lengthwise and then chop into bit-sized pieces.
  2. Place into colander and sprinkle with salt. Let sit while preparing rest of salad.
  3. Chop up strawberries into bite-sized pieces and mince up parsley.
  4. In a small glass bowl, whisk together tahini, lemon juice, and lemon zest.
  5. Rinse off cucumber and pat dry. Add to a mixing bowl along with strawberries, parsley, and dressing. Toss to coat. Chill until ready to serve and enjoy!
