Creamy Spinach and Mushroom Pasta

Ingredients
8 ounces gluten-free pasta of choice
2 Tablespoons olive oil
½ small onion (about 1/2 cup), chopped
4-5 garlic cloves, minced
½ cup chopped mushrooms (or more)
15 oz can organic crushed fire roasted tomatoes
1 teaspoon Italian seasoning
½ teaspoon crushed red pepper
¼ teaspoon pink Himalayan/sea salt
3-4 ounces cream cheese, cut into pieces (dairy free, if needed)
5 ounces organic baby spinach
Optional: Top with desired protein and grated parmesan cheese
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet, heat oil until hot. Add onions, garlic, and mushrooms. Cook for about 3 minutes, or until fragrant. Stir in tomatoes and spices and cook until hot and bubbly.
- Reduce heat to low. Whisk in cream cheese. Once melted, stir in spinach until wilted.
- Add cooked pasta to pan and toss to coat with sauce. Top with desired protein and parmesan, serve hot and enjoy!
