Low-Carb Pomegranate Cream Cheese Tart

Ingredients

    FILLING

    • 8 oz organic cream cheese (room temperature)
    • ½ cup coconut cream
    • 3 Tablespoons powdered Lakanto (or preferred sweetener)
    • 1 vanilla bean, split and inside seeds scraped out (or 1 tsp vanilla extract)
    • 3-4 drops orange essential oil
    • Pomegranate seeds for garnish

    CRUST

    • 1 cup almond flour
    • ¼ cup flaxseed meal
    • ¼ cup unsweetened shredded coconut
    • ¼ teaspoon Himalayan or sea salt
    • ¼ cup ghee, melted (plus 1-2 Tablespoons more, if needed)
    • 3 Tablespoons powdered Lakanto (or preferred sweetener)

    Instructions

    1. Preheat oven to 325F. Mix together almond flour, flaxseed meal, shredded coconut, salt, and Lakanto. Stir in melted ghee until crumbly, adding extra if needed.
    2. Press crust mixture into pie plate/tart pan. Using a fork, poke some holes in crust. Bake for about 20 minutes until lightly brown. Let crust cool completely. While crust cools, make the filling.
    3. Mix all filling ingredients together using an electric beater until smooth and creamy. Pour filling into cooled crust and spread evenly. Refrigerate until filling sets (about 2 hours).
    4. When ready to serve, garnish with fresh pomegranate seeds. Enjoy!!

        We have not tried it with coconut flour or wheat flour, so we can’t guarantee the outcome, but usually, coconut flour can be used to replace almond or wheat flours in any recipe.
