Holiday Cranberry Pecan Macaroons
Ingredients
2 egg whites
⅓ cup low-glycemic sweetener or preferred granulated sweetener (I’m using Truvia)
1 teaspoon pure vanilla extract
¼ teaspoon pink Himalayan/sea salt
2 cups unsweetened shredded coconut
⅓ cup dried cranberries, chopped (or dried cherries/apples/apricots)
¼ cup chopped pecans/walnuts
Optional add-ins:
2 scoops Organixx Clean Sourced Collagens powder
¼ teaspoon Ceylon cinnamon
1 teaspoon organic orange/lemon/lime zest
Keto adjustments:
Reduce cranberries to 2 tablespoons or omit completely
Use preferred granulated low-glycemic sweetener (e.g., Lakanto, Erythritol, Swerve)
Instructions
- Preheat oven to 325F.
- Whisk egg whites in a small bowl for about a minute until white and frothy. Add in sugar, vanilla, salt, and any optional add-ins. Whisk again.
- Add coconut, cranberries, and nuts. Fold to coat evenly.
- On parchment-lined baking sheet, form 1 – 1 ½ tablespoon-sized mounds, using dampened hands, if needed.
- Bake in preheated oven for 16-20 minutes or until golden brown. Set pan on cooling rack for 5 minutes before transferring cookies to rack to finish cooling. Enjoy!
