Festive Low-Sugar Cranberry Bark

Ingredients

14 ounces white chocolate chips (I’m using Lily’s brand for less sugar option)
½ cup coarsely chopped walnuts
¼ cup pepitas
Orange zest, from 1 organic orange
¼ teaspoon pink Himalayan/sea salt
⅛th – ¼ teaspoon cayenne pepper (optional)
2 scoops Organixx Clean Sourced Collagens powder
1 cup dried cranberries (I’m using apple juice sweetened), chopped if desired
1 cup unsweetened coconut flakes

Less Sweet Version:
Reduce cranberries to ½ – ¾ cup
Increase walnuts to ¾ cup
Increase pepitas to ½ cup
Reduce coconut to ½ cup

Instructions

  1. Preheat oven to 350F.
  2. Spread out pepitas in one layer on a parchment-lined baking sheet. Bake in preheated oven for about 5 minutes. Remove pan from oven, add walnuts in a single layer to pan and bake for about 5 more minutes. Remove pan from oven and let pepitas and walnuts cool.
  3. In a double broiler, add white chocolate chips and heat until just melted, stirring constantly. Remove from heat and stir in salt, cayenne pepper, orange zest, and collagens powder. Then stir in remaining ingredients to coat well with chocolate.
  4. Spread the mixture out onto a wax paper-lined baking sheet. Refrigerate until set, an hour or so. Break bark into desired sized pieces and enjoy!
  5. Store bark in a covered container for up to 2 weeks. Optional dipping sauce: unsweetened yogurt of choice.
