Holiday Low-Carb Coco-Nutty Granola
Ingredients Highlights
Coconut contains lauric acid, which is immune-boosting, antiviral, and antibacterial. Coconut is also loaded with minerals like magnesium, calcium, phosphorus, and iodine.
Coconut oil provides a boost of healthy fat that can energize and satiate. It is a strong antiviral, anti-inflammatory, and antibacterial food.
Flax seeds provide fiber and plant-based omega-3s that support digestion, satiety, and healthy inflammation balance.
Pecans contain more than 19 vitamins and minerals including vitamins A, E, folic acid, calcium, magnesium, phosphorus, potassium, several B vitamins, and zinc. One ounce of pecans provides 10% of the recommended Daily Value for fiber.
Sunflower seeds deliver vitamin E, selenium, and healthy fats to support antioxidant protection and cellular health.
Walnuts are neuroprotective and support heart health. They are loaded with antioxidants, omega-3 fatty acids, manganese, molybdenum, and biotin.
Ingredients
1 cup chopped raw walnuts
1 cup chopped raw pecans
½ cup chopped raw macadamia nuts
½ cup sunflower seeds (I’m using roasted & salted)
½ cup lightly chopped unsweetened coconut flakes
2 Tablespoons freshly ground flax seeds
3 packets stevia (or low-glycemic sweetener of choice)
1 ½ teaspoons Ceylon cinnamon
¼ teaspoon ground ginger
¼ – ½ teaspoon pink Himalayan/sea salt (use less if seeds are salted)
2 scoops Organixx Clean Sourced Collagens powder (optional)
¼ cup coconut oil, melted (or butter/ghee)
1 Tablespoon pure maple syrup (or an additional TBSP of coconut oil)
2 teaspoons pure vanilla extract
Instructions
- Preheat oven to 320F.
- In a large mixing bowl, toss together nuts, seeds, coconut, flax, stevia, spices, and Organixx Clean Sourced Collagens powder, if using. Add maple syrup, vanilla, and melted oil. Toss together again to coat well.
- Spread mixture evenly on a parchment-lined baking sheet. Press down. Bake in preheated oven for 10 minutes. Give a good stir and press down again. Bake an additional 5-10 minutes or until lightly browned, watching carefully so as not to burn.
- Remove pan from oven and let granola cool completely. Transfer to an air-tight container and enjoy!

I like the recipe but I dded a cup of organic sprouted oats to make it a bit more like traditional granola.
