Chocolate Espresso Date Balls
Ingredients
1 cup raw cashews
¾ cup pitted dried dates, packed (7 or 8)
¼ cup organic raisins
¼ cup unsweetened shredded coconut
2 Tablespoons unsweetened cocoa/cacao powder
1 ½ Tablespoons finely ground espresso beans (or dark roasted coffee beans)
1 teaspoon pure vanilla extract
¼ teaspoon pink Himalayan/sea salt
Optional Add-ins:
1-2 scoops Organixx Clean Sourced Collagens Powder

Instructions
- Add cashews, dates, and raisins to a food processor. Process until mixture begins to clump together.
- Add in coconut, cocoa/cacao powder, espresso beans, vanilla, and salt. Process until well incorporated.
- Shape about 1 tablespoon of the mixture into a ball. Roll ball in shredded coconut or cocoa powder. Repeat with remaining mixture.
- Refrigerate balls for up to a week and enjoy as desired.
