Holiday Cashew Artichoke Spinach Dip
Ingredients
1 cup raw cashews, soaked 2+ hours & drained
½ cup unsweetened milk + ½ cup unsweetened yogurt (or 1 cup unsweetened kefir or 1 cup coconut milk)
¼ cup nutritional yeast
½ cup shallots, diced
3 garlic cloves, smashed
1 organic lemon, zested & juiced (2 Tablespoons)
1 Tablespoon olive/avocado oil
1 teaspoon pink Himalayan/sea salt (or to taste)
¹⁄₁₆ teaspoon Cayenne pepper (or to taste)
3 cups chopped baby spinach (about 3.5 oz)
1 14-oz can artichoke hearts, chopped & drained
Optional:
Stir in 2 scoops Organixx Clean Sourced Collagens powder before baking (omit for vegan option)
Garnish with a few pinches of paprika and parmesan cheese
Instructions
- Soak cashews in filtered water for 2 hours or overnight to soften.
- Drain cashews and add them to a high-speed blender along with milk, yogurt, yeast, shallots, garlic, lemon juice & zest, oil, salt, and cayenne pepper. Blend until smooth and creamy. Taste and adjust seasonings, if needed.
- Preheat oven to 375F. Grease an 8×11 oven-safe pan or an 8- or 9-inch cast iron skillet. Add chopped spinach and artichokes to pan. Pour cashew mixture over top. Stir together. Add garnishes, if desired.
- Bake in preheated oven for 15-20 minutes or until hot and thick.
- Enjoy with your favorite vegetables/crackers/pita bread, etc.
