Baked Carrot Cake Steel Cut Oats
Ingredients
1 cup steel cut oats
¾ cup shredded carrot
¼ cup unsweetened shredded coconut
¼ cup chopped walnuts/pecans
Spices: 1 ½ teaspoons Ceylon cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg, ½ teaspoon pink Himalayan/sea salt
2 ¼ cups coconut milk (or preferred milk)
3 Tablespoons pure maple syrup/honey (or preferred sweetener or substitute with dried fruit)
2 Tablespoons olive oil/coconut oil/butter
1 egg (or chia/flax egg)
1 teaspoon pure vanilla extract
Optional Add-ins/Toppings:
1-2 scoops Organixx Clean Sourced Collagens powder
Raisins, chopped dates, or other dried fruit
Top with coconut cream/yogurt
Instructions
- Preheat oven to 375F.
- In an 8X8 baking dish, add in oats, carrots, coconut, walnuts, spices, and any optional add-ins. Stir to combine.
- In a medium-sized bowl, whisk together milk, maple syrup, coconut oil, egg, and vanilla. Pour into pan and stir.
- Bake in preheated oven for about 40 minutes or until desired doneness is reached. Serve up with optional toppings and enjoy!
- Leftovers can be stored in the refrigerator for up to 4 days.
