No-Refined-Sugar Breakfast Pan-Cake
Ingredients
½ cup unsweetened milk + ½ Tablespoon lemon juice
1 ½ cups gluten-free flour (I’m using Bob’s Red Mill 1 to 1)
½ cup almond flour
1 ½ teaspoons baking powder
1 teaspoon Ceylon cinnamon
½ teaspoon each: baking soda, ground ginger, and pink Himalayan/sea salt
6-7 chopped medjool dates (about 1 cup)
½ cup unsweetened applesauce
¼ cup melted & cooled coconut oil/butter/ghee or olive oil
2 eggs
1 Tablespoon pure vanilla extract
Optional toppings:
Yogurt, coconut cream, maple syrup, chopped dates, dried fruit, fresh fruit, applesauce, chopped nuts/seeds
Instructions
- Preheat oven to 350F.
- In a small bowl, stir together milk and lemon juice. Set aside.
- In a large mixing bowl, whisk together flours, baking powder, cinnamon, baking soda, ginger, and salt. Set aside.
- In a high-speed blender, add dates, applesauce, lemon milk, oil, eggs, and vanilla. Blend up well. Add to dry ingredients and stir until just combined.
- Spread evenly into a lightly greased 7”x11” baking pan. Bake in preheated oven for about 20 minutes or until toothpick comes out clean when inserted in middle.
- Top with desired toppings, serve, and enjoy!

blueberries, butter and a little maple syrup, though sweet enough without the syrup. Husband loved it!
Did not have a 7 x 11 pan. I don’t think they come in that size-8 x 8 or
9 x 11. Have a 10 inch deep pie dish that I used and seemed to work.
