Blueberry Lemonade “Jello” with Fresh Cream & Berries

Ingredients

32 ounces blueberry lemonade (divided into 3 ⅔ cups + ⅓ cup)
2 Tablespoons gelatin powder, unflavored
1 Tablespoon preferred sweetener
⅛ teaspoon pink Himalayan/sea salt

Whipping Cream:
Fresh berries (blueberries, raspberries, strawberries, blackberries)
1 ½ cups coconut cream (hardened in refrigerator over night) or heavy whipping cream
1 Tablespoon preferred sweetener

Instructions

  1. In a small bowl, add 1/3 cup of lemonade and gelatin. Stir to combine and set aside to bloom (thicken).
  2. In a medium-sized pot, pour in remainder of juice. Over medium heat, cook until just about boiling. Remove from heat and whisk in bloomed gelatin along with sweetener and salt. Whisk until completely dissolved. Pour into an 8×8 pan. Set in refrigerator for about 6 hours to firm.
  3. Whip coconut or heavy whipping cream and sweetener until it holds its shape.
  4. Serve your DIY “jello” topped with whipping cream and berries. Enjoy!
