Father’s Day Bacon and Spinach Quiche
Ingredients
1 Tablespoon olive oil
¼ cup chopped scallions
2 cups organic baby spinach, chopped
4 large eggs
¼ cup + 2 Tablespoons coconut cream
¼ – ½ teaspoon pink Himalayan/sea salt (start with ¼ tsp)
⅛ teaspoon cayenne pepper (or to taste)
4 cooked bacon strips, chopped (or preferred protein)
¼- ⅓ cup freshly grated Parmesan cheese (optional)
Optional add-ins/substitutions:
1 scoop Organixx Clean Sourced Collagens powder
Mushrooms, sliced
Bell peppers, chopped
Tomatoes, diced
Garlic, minced
Serve with your favorite salsa, sliced avocado, etc.
Instructions
- Preheat oven to 375F.
- In a skillet, heat oil over medium heat until hot. Add in onions and saute until translucent, about 3 minutes. Add in spinach and saute just until wilted, about 30 seconds, and remove pan from heat.
- In a mixing bowl, whisk together eggs, coconut cream, salt, cayenne pepper, and Organixx Clean Sourced Collagens powder, if using. In 2 greased 5X5 baking pans (or 2 large ramekins), divide out the egg mixture evenly. Add spinach, bacon, and cheese and gently stir.
- Bake in preheated oven for about 22-24 minutes or until eggs are baked through.
