Turmeric Carrot Chia Pudding

Ingredients

2.5 lb organic carrots, juiced (about 1 cup of carrot juice)
1 inch fresh ginger root (or ½ teaspoon powdered ginger)
1 inch fresh turmeric root (or ½ teaspoon powdered turmeric)
½ Tablespoon pure maple syrup (optional)
½ teaspoon Ceylon cinnamon
⅛ teaspoon cayenne pepper
¼ cup chia seeds

Optional Toppings:
Coconut cream, coconut flakes, additional cinnamon/turmeric powder/ginger powder

Instructions

  1. Juice carrots, ginger, and turmeric root using a juicer or high-speed blender.
  2. For blender, chop up carrots, ginger, and turmeric root. Add to blender with a little filtered water and blend well. Filter juice through nut milk bag.
  3. Add juice to a bowl and whisk in spices and sweetener, if using.
  4. Whisk in chia seeds. Let stand for a few minutes and whisk again to ensure no lumps.
  5. Refrigerate covered for 4 hours or overnight.
  6. Add pudding to serving bowls, top with desired toppings, and enjoy!
