Father’s Day Salmon Burgers
Ingredients
1 lb fresh salmon (a little extra is fine)
3 Tablespoons olive oil, divided
2 eggs, beaten
2 Tablespoons full-fat/Greek yogurt
1 teaspoon Dijon mustard
Spices: ½ teaspoon pink Himalayan/sea salt, ½ teaspoon smoked paprika, ⅛ teaspoon cayenne pepper
¼ – ⅓ cup chopped parsley
2 Tablespoons chopped fresh chives
1 green onion, chopped (include green & white parts)
1 Tablespoon lemon zest (about 1 lemon)
½ cup almond flour
Lemon Cucumber Yogurt Sauce
¾ cup full-fat plain (unsweetened) yogurt
1 teaspoon fresh lemon juice
¼ teaspoon garlic salt
¹⁄₁₆ teaspoon cayenne pepper
¼ cup chopped cucumber
Instructions
- Preheat oven to 400F.
- Place salmon on a parchment-lined baking sheet. Drizzle with 1 TBSP of olive oil. Sprinkle with ½ teaspoon salt. Bake in preheated oven for about 12 minutes, or until cooked through. Remove pan from the oven and allow the salmon to cool completely.
- While salmon cools, whisk together sauce ingredients, except for cucumbers, and place sauce in the refrigerator.
- In a large mixing bowl, break up cooled salmon into pieces (remove any skin if present). Add the remaining ingredients. Mix everything together until well combined and the mixture sticks together when pressed. Mixture will be soft. Shape into desired size patties.
- In a large skillet over medium heat, heat the remaining 2 TBSP of olive oil until hot but not smoking. Add salmon patties and cook 3-4 minutes on each side, being careful when flipping. Carefully remove cooked burgers from the pan and place on paper towel to collect extra oil.
- Add the chopped cucumber to the sauce and serve over the cooked salmon burgers. Enjoy!

Almond flour is a gluten-free flour made by grinding almonds after the skin has been removed. It’s softer and finer than almond meal which is made by grinding almonds with the skin left on.
Chives – The organosulfur compounds in chives help protect against abnormal cell growth, especially in the stomach and colon.
Cucumbers help keep you hydrated, flush out toxins, and provide many health-boosting vitamins and minerals. Cucumbers may also help protect the body against constipation and kidney stones and help control blood pressure.
Egg yolks are rich in nutrients including iron and vitamins A, D, E, and K, but it’s the white that provides the most protein. An average-size egg contains around 6-7 grams of protein with around 4 grams coming from the egg white.
Dijon mustard is the traditional mustard of France made from black and brown mustard seeds and white wine. It is both more intense and has a more complex flavor than typical yellow mustard.
Lemon is high in vitamin C, which is required for countless bodily functions including skin, immune system, and cardiovascular health.
Lemon zest contains a compound known as D-Limonene which is believed to help burn fat, reduce inflammation, and kill disease-causing germs. Be sure to use only organic lemons to minimize pesticide exposure.
Pure olive oil is high in nutrients including vitamins D, E, K, and A as well as omega-3 fatty acids. For the highest quality, look for organic extra virgin olive oil in dark glass bottles or tins that have an expiry date.
Parsley is not only good for freshening breath, it also helps to cleanse the body of toxins.
Scallions (aka green onions) have a mild onion taste and can be used raw or cooked.
Smoked paprika also goes by the name Spanish paprika, sweet paprika, smoked pimenton, or just pimenton. It’s made from peppers that are smoked before crushing and has a rich, smoky flavor.
