Garlic and Honey Roasted Brussels Sprouts Salad

Ingredients

    Salad Ingredients:
  • 1 ½ – 2 lbs fresh Brussels sprouts, trimmed & halved
  • 3 Tablespoons local honey
  • ¼ cup olive or avocado oil
  • 1 garlic head, skin removed from cloves
  • ¼ teaspoon pink Himalayan or sea salt
  • ¼ teaspoon fresh black pepper
  • 8-10 ounces organic spinach or salad mix
  • ½ cup chopped walnuts (toasted or raw)
  • ½ cup dried cranberries (optional)
  • Additional salad veggies (optional)
    Homemade Lemon Dressing:
  • ¼ cup olive or avocado oil
  • Juice from 1 lemon (about 2 Tablespoons)
  • 1 Tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon pink Himalayan or sea salt
  • 1 scoop Organixx Clean Sourced Collagens powder (omit for vegan option)
  • 2 minced garlic cloves (optional)
  • Pinch of cayenne pepper (optional for added heat)

Instructions

  1. Cut tough ends off Brussels sprouts, keeping a bit of the base to hold them together. If large, slice them in half. Place in a large mixing bowl. Add peeled garlic cloves. In a separate small mixing bowl, add olive/avocado oil and honey. Whisk together and pour over Brussels sprouts and gently toss to coat. Sprinkle with salt and pepper.
  2. Spray oil (or spread 1 TBSP of olive oil) over baking sheet. Spread coated Brussels sprouts out in a single layer, cut side facing down. Roast in preheated 475F degree oven for 15 to 25 minutes or until Brussels sprouts are tender; stirring halfway through. Remove pan from oven and let Brussels sprouts cool until warm.
  3. In a glass jar with a tight-fitting lid, add all dressing ingredients and shake to incorporate together. Place Brussels sprouts in a serving dish and coat with dressing. Toss gently and enjoy!
  4. Dressing can be made in advance and stored in the refrigerator until ready to assemble salad.

Ingredient Highlights

Apple Cider Vinegar is full of enzymes and good bacteria. It contains acetic acid, which has been shown to help lower blood pressure.

Avocado oil is made by pressing the pulp of avocados. It is an excellent oil for cooking, salad dressings, and for DIY skin, nail & hair treatments.

Brussels sprouts have antioxidant, antimicrobial, anti-inflammatory, immune-boosting, anti-aging, neuroprotective, and anti-diabetic properties. They are also abundant in quercetin, glutathione, beta-carotene, indoles, vitamin C, lutein, and the metabolic substance DIM, which is a natural aromatase inhibitor.

The high beta-carotene content of cayenne pepper has been found to increase immunity and help reduce symptoms in asthma.

Collagen helps maintain the structure and integrity of skin, hair, nails, muscle tissue, bones, tendons, and more. Organixx Clean Sourced Collagens includes targeted nutrients such as zinc, vitamin C, and vitamin B6 which enhance the bioavailability and potency of collagen.

Cranberries are powerfully antibacterial but function differently from antibiotics. Rather than killing harmful bacteria, they simply flush it out of the body.

There are over 300 varieties of garlic grown around the world. It is considered both a vegetable and an herb and is clinically proven to support the immune system.

High in vitamin C, lemon contains potent antioxidants that support a healthy immune system and respiratory function.

Pure olive oil is high in nutrients including vitamins D, E, K, and A as well as omega-3 fatty acids. For the highest quality, look for organic extra virgin olive oil in dark glass bottles or tins that have an expiry date.

Raw honey is a good source of many vitamins and is rich in antioxidants. Its antioxidant and anti-bacterial properties can help improve overall immune function.

Spinach supports healthy bones and eyes and slows age-related decline in brain function. It is loaded with vitamin K, which promotes healthy blood and circulation.

Walnuts are a good plant source of omega-3 fatty acids. Eating foods containing omega-3s can help cleanse your lungs and keep your pulmonary system working effectively.

Organixx Clean Sourced Collagens blend contains five types of collagen from four sources. What’s more, it’s combined with targeted nutrients such as zinc, vitamin C, and vitamin B6 which specifically enhance the bioavailability and potency of collagen. Clean Sourced Collagens is formulated from the ground up to enhance and support your body’s natural ability to heal and rebuild itself from the INSIDE out.
