Garlic & Honey-Roasted Brussels Sprouts Salad

Ingredients

    Salad Ingredients:

    • 1 ½ – 2 lbs fresh Brussels sprouts, trimmed & halved
    • 3 Tablespoons local honey
    • ¼ cup olive or avocado oil
    • 1 garlic head, skin removed from cloves
    • ¼ teaspoon pink Himalayan or sea salt
    • ¼ teaspoon fresh black pepper
    • 8-10 ounces organic spinach or salad mix
    • ½ cup chopped walnuts (toasted or raw)
    • ½ cup dried cranberries (optional)
    • Additional salad veggies (optional)

    Homemade Lemon Dressing:

    • ¼ cup olive or avocado oil
    • Juice from 1 lemon (about 2 Tablespoons)
    • 1 Tablespoon apple cider vinegar
    • 1 teaspoon Dijon mustard
    • ¼ teaspoon pink Himalayan or sea salt
    • 1 scoop Organixx Clean Sourced Collagens powder (omit for vegan option)
    • 2 minced garlic cloves (optional)
    • Pinch of cayenne pepper (optional for added heat)

    Instructions

    1. Cut tough ends off Brussels sprouts, keeping a bit of the base to hold them together. If large, slice them in half. Place in a large mixing bowl. Add peeled garlic cloves. In a separate small mixing bowl, add olive/avocado oil and honey. Whisk together and pour over Brussels sprouts and gently toss to coat. Sprinkle with salt and pepper.
    2. Spray oil (or spread 1 TBSP of olive oil) over baking sheet. Spread coated Brussels sprouts out in a single layer, cut side facing down. Roast in preheated 475F degree oven for 15 to 25 minutes or until Brussels sprouts are tender; stirring halfway through. Remove pan from oven and let Brussels sprouts cool until warm.
    3. In a glass jar with a tight-fitting lid, add all dressing ingredients and shake to incorporate together. Place Brussels sprouts in a serving dish and coat with dressing. Toss gently and enjoy
    4. Dressing can be made in advance and stored in the refrigerator until ready to assemble salad.
