Refreshing Mango Tahini Salad Dressing

Ingredients

2 large mangoes (can substitute with 2 cups frozen mango chunks, thawed)
2 Tablespoons tahini
1 garlic clove, minced
1 Tablespoon lime juice
1 teaspoon grated ginger root
¼ teaspoon pink Himalayan/sea salt
¹⁄₁₆ teaspoon (or more) cayenne pepper
2 Tablespoons extra virgin olive oil
Filtered water for thinner consistency

Instructions

  1. Add mango to a food processor along with tahini, garlic, lime juice, ginger root, salt, and cayenne. Blend well.
  2. Whisk or blend in olive oil. Add filtered water for a thinner dressing consistency, if desired.
  3. Serve over your favorite salad or vegetable dish and enjoy!
  4. Dressing can be stored in the refrigerator for up to 4 days.
