Keto Cinnamon Muffins

Ingredients

  • 3 cups almond flour
  • 1/2 cup ghee or coconut oil, melted
  • 4 large eggs, whisked
  • 1/4 cup cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 teaspoon (5 ml) lemon juice
  • Stevia or xylitol, to taste
  • 1 teaspoon baking soda

Instructions

  1. Preheat oven to 350 F (175 C).
  2. Mix together all the ingredients in a large mixing bowl.
  3. Pour into muffin pans (use silicone muffin pans or grease the metal pans).
  4. Bake for 18-20 minutes until a toothpick comes out clean when you insert it into a muffin.

  4. I left this comment yesterday but I didn’t see a rely. I made there’s last night and they are really good. I just need the nutrition information for them, please. Is there a ground cinnamon that is a lighter (in color) you can use? Loved the video also!!

  5. I’ve never used stevia before. Can you give a suggestion of about how much to use so I can try this recipe and then I will adjust from there. Thanks

    • Hi Lelia, You can actually use your desired sweetener. The recipe suggests stevia or xylitol but Katrina actually used 1/2 cup of lakanto.

      • So is that similar to stevia? I’ve never heard of it. Is 1/2 c. of stevia way too much or does that sound in the ballpark?

        • Hi Leila, xylitol is a sugar alcohol used as a sugar substitute. The amount of stevia will depend on how sweet you want the muffins to be. Stevia is 30 times sweeter than sugar in its whole plant form, and 300 times sweeter when it’s refined. It’s better to start with a small amount and taste the batter to see if it is sweet enough for you.

          • I use pure stevia powder in all my recipes and I would probably start of with 1/2 tsp. taste the batter if it is not sweet enough I would add 1/8 tsp at a time to the sweetness you like.

  6. I’ve always read that coconut flour and almond flour can’t substitute for each other because one of them absorbs more liquid than the other, affecting the outcome.

    • Hi Michelle! It depends on the size of cake you wanted to bake. The smallest cake tin available in round is 6 inch. while in square is 5 inch. Please keep in mind that the recipe and the ingredients are formulated for the size of a muffin, and a change in container may require a change in the steps or outcome of the dish.
