Gluten-Free Orange Raisin Irish Soda Bread
Ingredients
3 cups Gluten-Free 1-to-1 baking flour (I’m using Pamela’s Gluten-Free All-Purpose Flour Mix)
2 Tablespoons coconut sugar (optional)
2 teaspoons baking powder
1 teaspoon baking soda
¾ teaspoon pink Himalayan/sea salt
½ cup raisins/cranberries
Zest from 1 organic orange (about 1 Tablespoon)
1 ½ cups plain dairy or non-dairy yogurt
2 Tablespoons dairy or non-dairy milk
2 Tablespoons butter/coconut oil, melted & cooled
1 egg
Instructions
- Heat oven to 320F.
- In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt. Stir in raisins and orange zest and set aside.
- In a medium mixing bowl, whisk together yogurt, milk, melted butter/coconut oil, and egg. Add the wet ingredients to the dry ingredients and stir together. The dough will be sticky; let your dough rest for about 10 minutes to soak up some of the liquid and to firm up a bit.
- Lightly flour or grease a 9-inch cast iron skillet. With floured hands, shape your dough into a ball and flatten out slightly in the pan (dough shouldn’t be touching the sides of the pan).
- Cut a cross into the dough with a sharp knife. And smaller slits in each of the quarters. Use any remaining liquid from your wet ingredient bowl to brush over the top and sides of the dough with your hand.
- Bake for 1 hour or until a toothpick comes out clean.
- Cool bread on a cooling rack for about 30 minutes before slicing. Enjoy!

Coconut sugar has the consistency of sugar but has a much lower glycemic index.

Orange is best known as being a good source of vitamin C, but is often overlooked for its other amazing benefits, such as supporting the immune system.

Thank you so much for your sweet comment. My hair is growing out right now and goes through different stages.... this happens to be a better stage than others. Haha.
If you can't find the Pamela's mix, I would try Bob's Red Mill. Pamela's seems to create a softer texture but both should work fine. I loved how this bread turned out!

Hi Karen!
You can use a round cake pan in place of the cast iron skillet. Simply follow the rest of the directions as written as the bread is baked in the oven.

Thanks for this recipe; I had been looking up gluten free soda bread recipes and this one is uniquely different than most; love the idea of the orange and cranberries. The addition of yoghurt in place of buttermilk is a nice touch, along with more fat! If I can locate Pamela's mix here in rural KY, I will give it a go.
Just another thing though: the background music in your videos is truly annoying and a distraction! I so enjoy you and your talents!
