Crunchy Detox Salad Recipe

Ingredients

    Salad Ingredients:
  • 1 small or ½ large cauliflower, roughly chopped
  • 2 bunches baby broccoli or ½ head of large broccoli, roughly chopped
  • ½ red cabbage, roughly chopped
  • 1 large or 2 small carrots, shredded
  • 1 cup fresh cilantro, roughly chopped
  • ½ cup chopped walnuts or pecans
  • ¼ cup organic raisins (optional)
    Dressing Ingredients:
  • 3 Tablespoons olive or avocado oil
  • 1 large carrot, chopped
  • ½ cup freshly squeezed lemon juice (about 3 lemons)
  • 1 Tablespoon fresh ginger, peeled & grated
  • 2 Tablespoons raw local honey (or preferred sweetener for vegan option)
  • 1/2 teaspoon pink Himalayan/sea salt
  • ¼ – ½ teaspoon sesame oil
  • 1 scoop Organixx Clean Sourced Collagens (optional; omit for vegan option)
  • Black pepper, to taste

Instructions

  1. Place dressing ingredients into a food processor or blender container and blend until smooth. Store dressing covered in the refrigerator for at least an hour before serving to allow flavors to meld.
  2. Roughly chop broccoli, cauliflower, and cabbage. Pulse each vegetable separately in a food processor into small pieces.
  3. Add all veggies to a large mixing bowl. Add in shredded carrots, cilantro, walnuts, and raisins. Toss well.
  4. When ready to serve, add dressing to vegetables and toss again. Enjoy right away!

  2. I sincerely ATTEMPTED to make this… added celery and some red onion – for some reason I thought they were in the recipe, but nope. I specifically bought a cabbage for this recipe then TOTALLY forgot to use it, so … it is now in the refrigerator. The fresh cilantro at the store wasn’t worth buying so I ended up buying dried cilantro in a spice bottle. I forgot to buy lemons so … With no lemons, I skipped your dressing recipe and decided to use the organic, keto mayo I have and mixed it with apple cider vinegar (the type with the mother) to make a salad dressing. Okay, so this was TOTALLY not the same as what you made but I had good intentions and my goal was to follow your recipe. LOL I will have to take a shopping list with me next time. And maybe invest in a food processor because I was so tired from all the chopping of veggies that I didn’t have the energy to clean up my mess afterwards. Thank God I am blessed with a wonderful hubby who did the dishes for me.
