Brain-Boosting Beet Bites

1 teaspoon coconut/olive/avocado oil
¼ teaspoon pink Himalayan/sea salt (divided)
1 medium-sized cooked & chopped up beet root (or more to have leftovers for other recipes)
1 cup gluten-free oats
⅔ cup pecans/walnuts
10 large pitted dates (about 1 packed cup)
⅓ cup coconut (plus more for coating)
2 Tablespoons ground flaxseed
2 Tablespoons cacao powder
⅛ teaspoon cayenne pepper

Optional ingredients:
2 capsules of Organixx Brain Health 8
Orange zest
Dried cranberries
Chocolate chips
Honey (or preferred sweetener)


  1. Preheat oven to 400F.
  2. Wash and dry beets and remove any greens.
  3. Coat the outside of each beet with a little bit of olive/avocado/coconut oil. Sprinkle with about 1/8 teaspoon of salt.
  4. Place on a parchment-lined baking sheet and roast for about 50 minutes, or until a fork can be inserted into the beets easily.
  5. Allow cooked beets to cool. With a knife, cut off both ends and remove the peel. Chop up one beet and place any extras in a sealed container in the refrigerator for other recipes (salads, smoothies, baked goods, oatmeal, etc.).
  6. Place all of the ingredients (including the cooked beet) into a food processor. Pulse and then let run until the mixture sticks together when pressed between fingers.
  7. Shape into desired size balls (about 20). Roll balls in additional shredded coconut, if desired, and enjoy!
  8. Store beet bites in the refrigerator for up to 5 days.
