Fourth of July Almond Flour Muffins
Ingredients
3 eggs
⅓ cup agave/date syrup/honey/maple syrup/or preferred low-glycemic liquid sweetener
⅓ cup grass-fed butter/ghee/melted coconut oil
¼ cup dairy/non-dairy milk
2 ½ cups almond flour
2 teaspoons baking powder
¼ teaspoon pink Himalayan/sea salt
1 organic lemon (2 Tablespoons juice + 1 tablespoon zest)
1 Tablespoon vanilla extract
½ cup chopped strawberries
½ cup blueberries
Optional Toppings: whipped cream/coconut cream, blueberries, strawberries
Instructions
- Preheat oven to 350F.
- In a large mixing bowl, whisk together eggs, sweetener, oil/butter, milk, lemon juice & zest, and vanilla extract.
- In a separate bowl, whisk together flour, baking powder and salt.
- Add dry ingredients to the wet ingredients and gently mix together. Fold in strawberries and blueberries.
- In a lined or greased muffin tin, divide batter out evenly. Bake in preheated oven for about 20 minutes or until a toothpick comes out clean when inserted in the middle.
- Allow muffins to cool completely. Serve with optional toppings, if desired, and enjoy!

Ingredients Highlights
Almond flour is a gluten-free flour made by grinding almonds after the skin has been removed. It’s softer and finer than almond meal which is made by grinding almonds with the skin left on.

Ghee is a type of clarified butter that has had the milk solids removed. It is rich in fat-soluble vitamins A, D, E, and K.
Lemon is high in vitamin C, which is required for countless bodily functions including skin, immune system, and cardiovascular health.
Maple syrup contains a number of minerals including manganese, zinc, calcium, and potassium. It also contains amino acids, antioxidants, and even some anti-inflammatory compounds.
Strawberries contain ellagic acid and a large number of polyphenols that help to rid the body of carcinogenic substances and inhibit the growth of abnormal cells.

I made these and was disappointed due to lack of flavor. Needs more agave for sweetness. The blueberries dissolved the almond flour structure. I sprinkled powdered sugar over the top. Taste was much improved.
