Almond Flour Chocolate Chip Cookie Skillet

Ingredients
½ cup + 2 Tablespoons almond flour
3-5 Tablespoons coconut sugar (I’m using vanilla coconut sugar)
½ teaspoon Ceylon cinnamon
¼ teaspoon baking soda
⅛ teaspoon pink Himalayan/sea salt
1 ½ Tablespoons butter/coconut oil/ghee, melted & cooled
1 egg, whisked
⅛ teaspoon almond extract OR ½ teaspoon pure vanilla extract OR ¼ teaspoon vanilla + ⅛ teaspoon almond extract
2 Tablespoons chocolate chips (plus extra for top)
Optional:
1-2 scoop Organixx Clean Sourced Collagens powder
Top with coconut cream
Instructions
- Preheat oven to 375F. Grease an 8-inch cast iron skillet.
- Whisk together almond flour, sugar, cinnamon, baking soda, salt, and Organixx Clean Sourced Collagens powder (if using). Stir in butter, egg and vanilla. Fold in chocolate chips.
- Pour batter into the skillet and spread evenly. Sprinkle a few extra chocolate chips on top.
- Bake in preheated oven for about 10 minutes. Remove skillet from oven and cool on a cooling rack.
- Optional: Serve cookie with coconut cream.

I would try using a 9.5X5 bread pan instead since it is closer to the area of an 8 inch skillet.
