Frozen Vanilla Delight

Ingredients

  • 1 cup organic full-fat coconut milk
  • 1-⅓ cups finely ground almonds
  • 10 pitted dates
  • ½ vanilla bean, seeds scraped out
  • ½ cup whole almonds, lightly toasted in dry frying pan
  • Fresh fruit (optional)

Instructions

  1. Into blender container or food processor place all ingredients except whole almonds. Blend until smooth.
  2. Coarsely chop toasted whole almonds, then stir into the mixture.
  3. In a shallow metal tray lined with parchment paper (to help with easy removal), pour in mixture and freeze.
  4. Prior to serving, lift out of tray and break the mass up into pieces.
  5. Place in blender container or food processor and process just until it reaches creamy consistency.
  6. Immediately scoop into serving dishes and enjoy with fresh fruit.

Ingredients

  • 1 cup pitted and halved dates
  • 1⁄2 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • 2 eggs
  • 1⁄4 teaspoon sea salt
  • 3 scoops Organixx Plain or Vanilla Bone Broth Protein powder
  • 1 1⁄2 cups shredded carrots
  • 1⁄2 cup walnut pieces
  • 1 1⁄2 cups oats
  • 3⁄4 cup raisins

Instructions

  1. Preheat oven to 375 degrees F.
  2. Line a 9-inch pie pan or 8-inch square dish with parchment paper.
  3. Blend together dates, coconut oil, vanilla and cinnamon.
  4. In a medium mixing bowl, whisk eggs, sea salt and protein powder together until eggs are lighter in color.
  5. Add date mixture and whisk to combine. Add remaining ingredients and stir to combine.
  6. Bake for 20 minutes or until done.

Independence Day Three Berry Parfait

Ingredients

  • 2 cans full-fat coconut milk (14 ounces) chilled in the refrigerator at least 12 hours
  • 1-2 Tbsp coconut sugar or honey, optional
  • 1 quart fresh strawberries
  • 1 quart fresh blueberries
  • 1 quart fresh raspberries or blackberries

Instructions

  1. Chill a small-medium metal mixing bowl and whisk attachment in the freezer for 15 minutes.
  2. Remove the thick coconut milk from each can and transfer it to the chilled mixing bowl, leaving any liquid coconut water in the cans (save the liquid for another use).
  3. Using the whisk attachment, beat on medium high for 2 minutes, or until light and fluffy. You are looking for soft peaks (after lifting the whisk out of the cream, the peak will hold, but the tip will gently flop over).
  4. Scrape down the bowl. If adding sugar or honey, add it to the bowl and continue beating another 2 minutes.
  5. Place a mix of berries in serving bowls or parfait glasses (wine glasses work well for this).
  6. Top the berries with cream. If you are using a tall glass for serving, you can layer the different berries with a small amount of cream between each layer.
