Ingredients
- 3 Tablespoons olive oil or butter
- 1 large or 2 small leek(s), sliced (about 2 cups)
- ¼ cup garlic, chopped (about 9 cloves)
- 1 teaspoon pink Himalayan or sea salt (divided)
- 1 lb mushrooms, quartered (about 5 ½ cups)
- 32 oz low-sodium chicken stock or veggie stock
- 1-2 Tablespoons liquid aminos/coconut aminos (optional)
- ¾ cup coconut cream scooped out from 1 full-fat can of coconut milk (or heavy cream)
- 3 scoops Organixx Clean Sourced Collagens powder (optional)
- ⅛ teaspoon cayenne pepper (or to taste)
- Juice of ½ lemon
- Kale or spinach, chopped
Instructions
- In a large pot over medium heat, add in 3 tablespoons of olive oil or butter and heat for a few minutes. Add in leek and garlic and 1/2 teaspoon of salt. Saute for about 4-5 minutes.
- Add mushrooms and remaining 1/2 teaspoon salt to pot and cook for 2 minutes, stirring as needed. Add in aminos and chicken stock and let simmer for 15-20 minutes.
- Remove from heat and add the cream, collagens powder, cayenne, and lemon juice. Let cool for just a bit before blending until creamy. Use either a high-speed blender (may need to blend in batches) or an immersion blender.
- Garnish with chopped kale or spinach if desired and enjoy hot!
