Bone broth has been around since our ancient ancestors discovered fire thousands of years ago. Most of the animal fat in bone broth comes in the form of a mixture of saturated and unsaturated fat, as well as linoleic acid. High temperatures, long durations of cooking, and exposure to oxygen may make it oxidize.
