Gluten-free Apple Crisp

Ingredients

  • 6 organic apples of your choice, peeled & chopped/sliced (you can leave peel on)
  • 2 Tablespoons Lakanto or coconut sugar
  • 1 teaspoon ground cinnamon
  • 1 ½ teaspoons lemon juice

Topping

  • 1 cup Lakanto or coconut sugar
  • 1 teaspoon ground cinnamon
  • ¾ cup old-fashioned gluten-free oats
  • ¾ cup gluten-free flour
  • ½ cup coconut oil
  • 2 capsules of Organixx 7 Mushrooms, opened
  • Pinch of Himalayan or sea salt

Instructions

  1. Preheat oven to 350 F. Grease 8″x8″ baking dish with coconut oil.
  2. In a mixing bowl, add chopped apples, 2 Tablespoons of Lakanto/coconut sugar, 1 teaspoon of cinnamon and lemon juice. Stir well. Place into baking dish.
  3. For the topping: In a separate bowl, add 1 cup of Lakanto/coconut sugar, oats, flour, 1 teaspoon of cinnamon, salt, 7 Mushrooms and coconut oil. Using your hands (or pastry cutter) mix up well until crumbly.
  4. Spread topping over apples and gently pat down to even it out.
  5. Bake for 40 – 50 minutes until golden brown and bubbly.
  6. Serve warm or cold. Enjoy!
